After Halloween, many often wonder what to actually do with their pumpkins! If you still have a whole pumpkin that was sitting on your Glenwood balcony or foyer, you should make pumpkin seeds and pumpkin puree with your family or friends!

Homemade Pumpkin Puree

Making homemade pumpkin pure is a fun way to spend time together in the kitchen making a fall staple that can be used for so many things from pumpkin soup, pumpkin cheesecake, pumpkin bread to pumpkin lattes! And, it is surprisingly simple!

Instructions:

  1. Preheat the oven to 350
  2. Cut a pumpkin in half
  3. Remove the pith and seeds (wash seeds and set aside to make pumpkin seeds!)
  4. Cube the pumpkin and toss with olive oil and sprinkle with salt
  5. Place the cubes on a baking tray lined with parchment paper
  6. Bake for 35- 45 minutes depending on your oven, start poking with a toothpick around 35 minutes (they are done when you can piece the pumpkin cube)
  7. Puree your cubes!
  8. You can freeze your puree if you would like to save it

Pumpkin Seeds

Pumpkin seeds make a delicious, healthy snack that your kids can help you prepare!

Instructions:

  1. Preheat the oven to 350
  2. Wash off and dry your pumpkin seeds completely!
  3. Season your pumpkin seeds on a baking tray lined with parchment paper with salt, pepper, garlic powder (if you like garlic) and olive oil
  4. You will put them in the oven for around 10 minutes (or until they appear golden brown) shake then after 5 minutes so all sides get roasted

Healthy Pumpkin Muffins

Instructions:

Ingredients:

  • 1 ¾ cups (220g) whole wheat flour (or all-purpose)
  • 1 tsp baking soda
  • ½ tsp salt
  • 2 tsp cinnamon
  • ½ tsp nutmeg
  • ¼ tsp ginger (optional)
  • 2 large eggs
  • 1 cup pumpkin puree (unsweetened)
  • ½ cup mashed ripe banana (or unsweetened applesauce)
  • ¼ cup coconut oil or melted butter
  • ⅓ cup maple syrup or honey (optional if avoiding all added sugars – use extra banana instead)
  • ¼ cup milk (any kind)
  • 1 tsp vanilla extract
  • Optional: ½ cup chopped walnuts, raisins, or dark chocolate chips (no sugar added)

  1. Preheat oven to 350°F (175°C). Line or grease a muffin tin.
  2. In a large bowl, whisk together the flour, baking soda, salt, and spices.
  3. In another bowl, mix the eggs, pumpkin puree, mashed banana, oil, milk, vanilla, and sweetener (if using).
  4. Add the wet ingredients to the dry and stir just until combined. Don’t overmix.
  5. Fold in any optional add-ins.
  6. Divide batter evenly into the muffin tin (makes 10–12 muffins).
  7. Bake for 18–22 minutes, or until a toothpick comes out clean.
  8. Let cool in the pan for 5 minutes, then transfer to a wire rack.

Carrot Cookie Bites

If you love carrot cake, but are looking for a new twist on a classic, then be sure to try out these carrot cookie bites! This delicious recipe is by Taste of Home.

Ingredients:

  • 2/3 cup shortening
  • 1 cup packed brown sugar
  • 2 large eggs, room temperature
  • 1/2 cup buttermilk
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 1/4 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon ground cloves
  • 2 cups quick-cooking oats
  • 1 cup shredded carrots
  • 1/2 cup chopped pecans

Recipe:

  1. Preheat oven to 375°. In a large bowl, cream shortening and brown sugar until light and fluffy, 5-7 minutes. Beat in the eggs, buttermilk and vanilla. Combine the flour, cinnamon, salt, baking powder, baking soda, nutmeg and cloves; gradually add to creamed mixture. Stir in the oats, carrots and pecans.
  2. Drop dough by rounded teaspoonfuls 2 in. apart onto ungreased baking sheets. Bake until lightly browned, 6-8 minutes. Remove to wire racks to cool.

Bunny Oreo Balls

If you are looking for a cute dessert, check out these Oreo Bunny Balls from the Food Network!

Instructions: 

  1. Line 2 rimmed baking sheets with parchment paper.
  2. Pulse the cookies in a food processor to fine crumbs. Add the cream cheese and pulse together until the mixture begins to ball up. Transfer to a large bowl and knead together a few times until completely combined.
  3. Roll about 1/3 of the mixture into 18 truffles (about 1 level tablespoon each) and place on one of the prepared baking sheets. Roll the remaining mixture into 18 larger truffles, (about 1 heaping tablespoon each), and place on the second prepared baking sheet. Refrigerate until firm and chilled through, about 1 hour.
  4. While the truffles chill, prepare the decorations.
  5. For the royal icing, combine the confectioner’s sugar and meringue powder in the bowl of a stand mixer fitted with a paddle attachment. Beat on low speed just to combine. Add 2 1/2 teaspoons water and increase the speed to medium. Beat the mixture until the icing is stiff enough to hold a peak but soft enough to pipe, about 2 minutes. If the icing gets too stiff, add up to 1/2 teaspoon more water.
  6. Divide the icing evenly between 2 bowls. Tint one bowl of icing bright pink using the pink food coloring. Tint the remaining bowl of icing with the black food coloring. Transfer the pink and black icings to separate piping bags (with no cut openings) or to resealable plastic bags and set aside.
  7. For the white coating, combine the candy melting wafers and coconut oil in a medium microwave-safe bowl. Microwave the mixture in 20-second intervals, stirring between each, until the wafers are melted and the mixture is smooth, about 1 minute 20 seconds. Set aside.
  8. Put some white sanding sugar and pink sanding sugar in separate bowls.
  9. For the bunny tails: Cut 9 of the marshmallows crosswise to create 18 halves. Carefully dip one flat side of each marshmallow piece in the white candy coating, let the excess drip off and then dip in the white sanding sugar. Place each marshmallow piece sugar-side up on a plate to set. These will be the bunny tails.
  10. For the bunny ears: Cut 18 of the marshmallows in half on the diagonal to create 18 pairs of bunny ears. Dip the cut side of each marshmallow piece in the pink sanding sugar. Place sugar-side up on the plate with the tails to set.
  11. For the bunny feet: Cut the remaining 18 marshmallows in half lengthwise to create 18 pairs of feet. Set aside on the plate with the tails and ears.
  12. Put a truffle in the white coating and use 2 forks to evenly coat. Lift out the truffle, letting any excess drip off, then return to the baking sheet. Continue with the remaining truffles (both sizes) until all are all coated. If the coating cools to room temperature during the dipping process, microwave it in 20-second intervals to reheat. Reserve the leftover white coating to use as glue for the tails, ears and feet.
  13. For the heads: Dip the bottoms of 2 bunny ears in the leftover white coating, place on top of a small truffle and hold in place until the coating sets, about 15 seconds. Snip a very small tip off the corner of each bag of icing. Pipe a small pink heart for a nose on the front (face) of the truffle. Pipe a pair of eyes and mouth using the black royal icing. Repeat with the remaining small truffles.
  14. For the bottoms: Dip the cut side of a marshmallow tail in the leftover white coating. Place the tail on top of one of the large truffles and hold in place until the coating sets, about 15 seconds. Dip the cut sides of two marshmallow feet in the leftover white coating. Position them on the truffle below the tail and hold until set in place. Use the pink royal icing to pipe a large oval on the top each foot and 3 small circles underneath for toes. Repeat with the remaining large truffles.
  15. Return all the truffles to the refrigerator to set, about 10 minutes. Serve chilled.

Classic Pot Roast

Pot Roast is a favorite Passover dish for many! While you may not be able to have your grandma’s homemade dish this year, you can try to create it yourself. A great recipe below comes from thejewishkitchen.com. I personally think the leftovers are just as tasty

Ingredients
  • 1 4-5 pound boneless bottom round roast
  • 1/4 cup vegetable oil
  • 2 yellow onions, sliced into rings
  • 3 garlic cloves, smashed
  • 3 large carrots, peeled and sliced into 1/2 pieces
  • 3 yukon gold potatoes, large cut into wedges or a dozen small new potatoes, whole, washed
  • 2 tbsp. tomato paste
  • 1 cup good red wine use a red wine you would drink, or water if you cannot use wine
  • 2 cups beef stock regular or low sodium, depending on dietary needs
  • 2-3 fresh thyme sprigs
  • 2 bay leaves
  • Kosher salt and pepper to taste
Instructions
  1. Preheat oven to 350 degrees.
  2. Season the roast on all sides with salt and pepper. In a Dutch oven over medium-high heat, heat vegetable oil and sear roast on all sides.
  3. Add the onions, garlic and tomato paste and cook until the vegetables are slightly colored. Add the beef stock, wine, thyme and bay leaves. Bring the liquid to a simmer and cover. Place in the oven.
  4. Cook for 1 1/2 hours. Add potatoes and carrots and cook for 1 more hour. Transfer roast to cutting board and let rest for 15 minutes.
  5. Slice roast and serve with vegetables and pan juices.

Matzo Ball Soup

If you are eating with your family this holiday outdoors, you might want a soup to warm you up! Matzo ball soup is delicious and will keep you warm! The recipe from foodandwine.com listed below is great!

Ingredients

Chicken Soup

  • 2 quarts chicken stock or low-sodium broth 
  • One 3-pound chicken 

Matzoh Balls

  • 1 1/4 cups matzoh meal 
  • 2 1/2 teaspoons kosher salt 
  • 1/2 teaspoon granulated garlic 
  • 1/2 teaspoon baking powder 
  • 1/2 teaspoon baking soda 
  • 5 large eggs, 3 separated  
  • 1/4 cup melted chicken fat (schmaltz) or vegetable oil 
  • 1/4 cup minced onion 
  • 1 tablespoon vegetable oil, for forming the matzoh balls 

To Finish

  • 1 large carrot, thinly sliced 
  • 2 celery ribs, thinly sliced 
  • 1 small onion, cut into 1/2-inch dice 
  • 1/4 pound rutabaga, peeled and cut into 1/2-inch dice 
  • 4 large dill sprigs 
  • 4 large parsley sprigs 
  • Kosher salt 
  • Freshly ground pepper 
Directions

Make the Chicken Soup

  • Step 1In a large pot, bring the chicken stock to a simmer. Add the chicken and return the stock just to a simmer. Cover the chicken with a small plate to keep it submerged and cover the pot. Reduce the heat to maintain a very low simmer; simmer until the chicken is cooked through, about 1 1/2 hours. Remove the chicken and let cool slightly, then shred the meat; discard the skin and bones. Strain the soup into a heatproof bowl. Skim off the fat and return the soup to the pot.

Meanwhile, Make the Matzoh Balls

  • Step 2In a large bowl, combine the matzoh meal, salt, garlic, baking powder and baking soda. In a medium bowl, whisk the 2 whole eggs with the 3 yolks, schmaltz and onion. In a separate bowl, beat the 3 egg whites with an electric hand mixer until stiff peaks form. Stir the schmaltz mixture into the dry ingredients, then stir in one-third of the beaten egg whites until incorporated. Gently fold in the remaining whites until no streaks remain. Press a sheet of plastic wrap directly onto the surface of the batter and refrigerate for about 20 minutes or overnight, until firm.
  • Step 3Line a baking sheet with plastic wrap. In a small bowl, combine the vegetable oil with 1 tablespoon of water. Scoop 1-tablespoon-size mounds of the matzoh batter onto the baking sheet. Using the oil-and-water mixture to keep your hands moist, roll each scoop of batter into a ball, handling them as gently as possible.
  • Step 4Return the chicken soup to a simmer. Add the carrot, celery, onion, rutabaga, dill and parsley and season with a big pinch each of salt and pepper. Add the matzoh balls. Cover and cook over moderate heat, turning the matzoh balls a few times, until they are plump and cooked through, about 25 minutes. Stir the shredded chicken into the soup and cook just until the meat is warmed through, about 2 minutes. Remove the herb sprigs. Season the soup with salt and pepper and serve immediately.

New York Road Runners Midnight Run

While NYE is typically associated with open bars and champagne galore, it’s also the perfect way to get a kickstart on your healthy resolutions! While the rest of the city may be sleeping in on January 1st, you can proudly say that you kicked off your 2025 with a midnight run! The New York Road Runners will be hosting their annual Midnight Run in Central Park, and festivities start at 10pm with music and dancing. Soft Gingerbread Cookies

This delicious recipe hails from acouplecooks.com! With the use of almond butter, wheat flower, and apple sauce- these cookies are much healthier than the traditional gingerbread cookie recipe! 

Ingredients:

  • 1 egg
  • 1/2 cup brown sugar
  • ¼ cup molasses
  • ¼ cup almond butter
  • 2 tablespoons melted butter
  • 2 tablespoons applesauce
  • 2 teaspoons ground ginger
  • 1 teaspoon cinnamon
  • 2 teaspoons allspice
  • ¼ teaspoon kosher salt
  • ½ teaspoon baking soda
  • 1 ¼ cup all purpose flour
  • ½ cup wheat flour
  • Turbinado sugar (for garnish)

Instructions:

  1. In a medium bowl, add 1 egg, ½ cup brown sugar, ¼ cup molasses, ¼ cup almond butter, 2 tablespoons melted butter, and 2 tablespoons applesauce; vigorously whisk to thoroughly combine.
  2. To the wet ingredients, stir in 2 teaspoons ground ginger, 1 teaspoon cinnamon, 2 teaspoons allspice, ¼ teaspoon kosher salt, ½ teaspoon baking soda, 1 ¼ cup all purpose flour, and ½ cup wheat flour until well combined. Turn out onto plastic wrap and form into a rough ball; cover with plastic wrap and chill at least 1 hour, or overnight.
  3. Preheat oven to 350°F.
  4. Flour a flat surface and a rolling pin, then roll out the dough ¼-inch thick. Use a cookie cutter to cut out gingerbread men, about 25-35 total. Place gingerbread men on a parchment paper-lined baking sheet and sprinkle with turbinado sugar.
  5. Bake about 8 minutes, until puffed and slightly firmed. Let rest on the pan for 2 to 3 minutes, then transfer to a cooling rack. Store covered at room temperature for several days or freeze for several months.

Coconut Bliss Ball

Ingredients:

  • 200 g coconut cream * from a refrigerated can
  • 125 g unsweetened shredded coconut + more for rolling
  • 50 g maple syrup
  • 1 Tbsp vanilla extract
  • 3-4 drops of each almond and rum extract see text for product recommendations
  • 100 – 150 g dark chocolate depending how many Bounty you want – 100 g for 10 pieces
Instructions:
  1. Make sure the can of coconut cream has been refrigerated overnight so that you can scrape the 200 g of cooled cream into the food processor easily.
  2. Combine the first 4 ingredients, adding a pinch of salt to heighten the flavor, and process until well combined. It should hold together fairly well when pinching together. Add more coconut cream if needed.
  3. Divide the batter into 2 equal portions. Add the almond extract to the Raffaello batch and the rum extract to the bounty batch. Process again or use your hands to combine it. 
  4. Using a heaping tsp of batter at a time, roll the coconut mixture into neat little balls and refrigerate.  Try not to keep rum and almond flavored bliss balls separate. 
  5. Melt chocolate in the microwave or over a hot water bath and cover the rum-flavoured balls with the chocolate. Sprinkle some coconut on top, if desired. Roll the Raffaello ones in the shredded coconut. Store the Bounty and Raffaello Coconut Bliss Balls in a sealable container in the fridge and ENJOY! 

Cinnamon Apple Chips

Ingredients:

  • 2 apples
  • cinnamon

Instructions:

  1. Preheat oven to 200ºF. 
  2. Thinly slice the apples, removing any seeds. 
  3. Sprinkle with cinnamon. 
  4. Bake for 1 hour. Flip the apples. Bake for another hour. 
  5. Let apple chips cool, and eat!

No Bake Healthier S’mores Pie

Ingredients

-1 1/2 cup graham crackers 

-5 tbsp melted butter

-1/4 cup granulated sugar

-2 medium ripe avocados

-1/4 cup unsweetened cocoa powder

-1/3 cup milk of choice (almond ect)

-4 tbsp maple syrup

-1 tsp vanilla extract

-1 cup plain full fat Greek yogurt 

-1 cup marshmallow fluff

-optional toping: mini marshmallows 

Directions:

  • Prepare Graham Cracker Crust: Use a food processor to pulverize graham crackers into fine crumbs, or crush them in a zip top bag with a rolling pin. Mix the graham cracker crumbs, melted butter, and granulated sugar together with a rubber spatula in a large bowl until combined. Press the mixture into the bottom of a 9″ pie plate and slightly up the sides. Use the bottom of a flat measuring cup to make sure it’s tight and compact. Refrigerate while you prepare avocado pudding.
  • Prepare Avocado Chocolate Filling: Wipe food processor clean, and add avocados, cocoa powder, milk, maple syrup, and vanilla. Blend until smooth and creamy, stopping to scrape down the sides of the food processor as needed.Dollop the chocolate avocado pudding over the graham cracker crust, and smooth to the edges. Refrigerate while you prepare topping.
  • Prepare Marshmallow Yogurt Topping: Combine Greek yogurt and marshmallow fluff in a large bowl. Use an electric hand mixer to beat mixture for 1 to 2 minutes, until smooth and creamy. (Alternatively, you can use a stand mixer with whisk attachment.)Very gently dollop marshmallow mixture over chocolate pudding, and smooth to all edges.If desired, place mini marshmallows over the marshmallow yogurt topping. For more of the camp fire experience, broil s’mores pie on the top oven rack under the LOW broil setting for 1 to 2 minutes, watching closely to not burn.
  • Chill pie for a minimum of 4 hours (or ideally overnight) before slicing into.

Classic Potato Latka Recipe

This recipe comes from the NYT and is as simple as it is delicious!

Ingredients:

  • 2 large Russet potatoes, scrubbed and cut lengthwise into quarters
  • 1 large onion, peeled and cut into quarters
  • 2 large eggs
  • 1/2 cup all purpose flour
  • 2 teaspoons coarse kosher salt, plus more for sprinkling
  • 1 teaspoon baking powder
  • 1/2 teaspoon freshly ground black pepper
  • safflower or other oil, for frying

Direction:

  1. Using a food processor with a coarse grating disc, grate the potatoes and onion. Transfer the mixture to a clean dishtowel and squeeze and wring out as much of the liquid as possible.
  2. Working quickly, transfer the mixture to a large bowl. Add the eggs, flour, salt, baking powder and pepper, and mix until the flour is absorbed.
  3. In a medium heavy-bottomed pan over medium-high heat, pour in about 1/4 inch of the oil. Once the oil is hot (a drop of batter placed in the pan should sizzle), use a heaping tablespoon to drop the batter into the hot pan, cooking in batches. Use a spatula to flatten and shape the drops into discs. When the edges of the latkes are brown and crispy, about 5 minutes, flip. Cook until the second side is deeply browned, about another 5 minutes. Transfer the latkes to a paper towel-lined plate to drain and sprinkle with salt while still warm. Repeat with the remaining batter.

History Of The Rockefeller Tree

This is Rockefeller Center’s 92nd annual Christmas Tree! The first tree was back in December of 1931. The workers paid for a 20-foot-tall tree to lift spirits! They even created their own tree ornaments and garlands. Holiday cheer can lift spirits- which is especially important this year! 

When To Visit

The 74-foot tree will be on display through the beginning of January and you can visit from 6am to 12am. On New Year’s Eve, you can only visit until 9pm. It can get crowded, so if you have the chance to visit during an hour that isn’t so popular, try that to get the closest and best view possible!
