Easy Easter Desserts

Carrot Cookie Bites

If you love carrot cake, but are looking for a new twist on a classic, then be sure to try out these carrot cookie bites! This delicious recipe is by Taste of Home.

Ingredients:

  • 2/3 cup shortening
  • 1 cup packed brown sugar
  • 2 large eggs, room temperature
  • 1/2 cup buttermilk
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 1/4 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon ground cloves
  • 2 cups quick-cooking oats
  • 1 cup shredded carrots
  • 1/2 cup chopped pecans

Recipe:

  1. Preheat oven to 375°. In a large bowl, cream shortening and brown sugar until light and fluffy, 5-7 minutes. Beat in the eggs, buttermilk and vanilla. Combine the flour, cinnamon, salt, baking powder, baking soda, nutmeg and cloves; gradually add to creamed mixture. Stir in the oats, carrots and pecans.
  2. Drop dough by rounded teaspoonfuls 2 in. apart onto ungreased baking sheets. Bake until lightly browned, 6-8 minutes. Remove to wire racks to cool.

Bunny Oreo Balls

If you are looking for a cute dessert, check out these Oreo Bunny Balls from the Food Network!

Instructions: 

  1. Line 2 rimmed baking sheets with parchment paper.
  2. Pulse the cookies in a food processor to fine crumbs. Add the cream cheese and pulse together until the mixture begins to ball up. Transfer to a large bowl and knead together a few times until completely combined.
  3. Roll about 1/3 of the mixture into 18 truffles (about 1 level tablespoon each) and place on one of the prepared baking sheets. Roll the remaining mixture into 18 larger truffles, (about 1 heaping tablespoon each), and place on the second prepared baking sheet. Refrigerate until firm and chilled through, about 1 hour.
  4. While the truffles chill, prepare the decorations.
  5. For the royal icing, combine the confectioner’s sugar and meringue powder in the bowl of a stand mixer fitted with a paddle attachment. Beat on low speed just to combine. Add 2 1/2 teaspoons water and increase the speed to medium. Beat the mixture until the icing is stiff enough to hold a peak but soft enough to pipe, about 2 minutes. If the icing gets too stiff, add up to 1/2 teaspoon more water.
  6. Divide the icing evenly between 2 bowls. Tint one bowl of icing bright pink using the pink food coloring. Tint the remaining bowl of icing with the black food coloring. Transfer the pink and black icings to separate piping bags (with no cut openings) or to resealable plastic bags and set aside.
  7. For the white coating, combine the candy melting wafers and coconut oil in a medium microwave-safe bowl. Microwave the mixture in 20-second intervals, stirring between each, until the wafers are melted and the mixture is smooth, about 1 minute 20 seconds. Set aside.
  8. Put some white sanding sugar and pink sanding sugar in separate bowls.
  9. For the bunny tails: Cut 9 of the marshmallows crosswise to create 18 halves. Carefully dip one flat side of each marshmallow piece in the white candy coating, let the excess drip off and then dip in the white sanding sugar. Place each marshmallow piece sugar-side up on a plate to set. These will be the bunny tails.
  10. For the bunny ears: Cut 18 of the marshmallows in half on the diagonal to create 18 pairs of bunny ears. Dip the cut side of each marshmallow piece in the pink sanding sugar. Place sugar-side up on the plate with the tails to set.
  11. For the bunny feet: Cut the remaining 18 marshmallows in half lengthwise to create 18 pairs of feet. Set aside on the plate with the tails and ears.
  12. Put a truffle in the white coating and use 2 forks to evenly coat. Lift out the truffle, letting any excess drip off, then return to the baking sheet. Continue with the remaining truffles (both sizes) until all are all coated. If the coating cools to room temperature during the dipping process, microwave it in 20-second intervals to reheat. Reserve the leftover white coating to use as glue for the tails, ears and feet.
  13. For the heads: Dip the bottoms of 2 bunny ears in the leftover white coating, place on top of a small truffle and hold in place until the coating sets, about 15 seconds. Snip a very small tip off the corner of each bag of icing. Pipe a small pink heart for a nose on the front (face) of the truffle. Pipe a pair of eyes and mouth using the black royal icing. Repeat with the remaining small truffles.
  14. For the bottoms: Dip the cut side of a marshmallow tail in the leftover white coating. Place the tail on top of one of the large truffles and hold in place until the coating sets, about 15 seconds. Dip the cut sides of two marshmallow feet in the leftover white coating. Position them on the truffle below the tail and hold until set in place. Use the pink royal icing to pipe a large oval on the top each foot and 3 small circles underneath for toes. Repeat with the remaining large truffles.
  15. Return all the truffles to the refrigerator to set, about 10 minutes. Serve chilled.

Holiday season is here! Finding outdoor activities close to your Glenwood apartment for you and your family will help make lasting memories! Visiting the Rockefeller Tree this year is a fun, distanced activity that is enjoyable for all! If you saw pictures of the tree when it first arrived, you may know it came in looking a bit disheveled- but don’t fear, it has gotten branch extensions (yes apparently that is a real thing!) and it now looks full and beautiful. History Of The Rockefeller Tree

This is Rockefeller Center’s 92nd annual Christmas Tree! The first tree was back in December of 1931. The workers paid for a 20-foot-tall tree to lift spirits! They even created their own tree ornaments and garlands. Holiday cheer can lift spirits- which is especially important this year! 

When To Visit

The 74-foot tree will be on display through the beginning of January and you can visit from 6am to 12am. On New Year’s Eve, you can only visit until 9pm. It can get crowded, so if you have the chance to visit during an hour that isn’t so popular, try that to get the closest and best view possible!

Green Building Emphasis

Many of the organization’s newest offerings, such as Emerald Green, Crystal Green, Hawthorn Park and the Encore, are built to LEED specifications. Glenwood buys “Green Power” energy, the electricity comes from nationally sourced wind RECs-Renewable Energy Credits. In addition, these buildings utilize a Demand Shifter, which is a power storage battery that is able to store electricity during off-peak hours and maintain a charge to use during high-demand hours. With the ability to power off the city grid, this Demand Shifter helps to protect New York City from a brown out or black out. Additionally, many Glenwood building garages have charging stations for electric cars.

When you think of fall you think apple picking, right?  We know there are plenty of farmers markets in NYC but there is something about picking those granny smiths right off the tree that make your experience a little bit more memorable. And, guess what? There are plenty of orchards just a hop, skip and a train ride away. Below we’ve rounded up five of our favorite farms that are accessible via public transportation. Another bonus? You’ll never run into any traffic jams when you take the train! Happy picking!

Wilkens Fruit & Fir Farm

Located in Yorktown Heights, NY, Wilkens Fruit & Fir Farm is now celebrating their 102nd year of harvest! You’ll enjoy a hayride out to the orchard (yeehaw!), and along with collecting apples, you can also stock up on Halloween pumpkins. If you’re planning ahead, it’s worth noting that starting the Saturday after Thanksgiving, you can even chop down your own Christmas tree! There is a corn maze and great treats too!

Cost: No admission cost, you are only charged for the apples you pick (which varies depending on type.) Credit cards are accepted.

How to get there: Take Metro-North to the Croton-Harmon or Peekskill stations, and then a taxi ride.

Maskers Orchard

Located in Warwick, NY, Maskers Orchard is known for their fresh crisp apples, country store filled with fall favorites like apple butter and homemade jams, wagon rides and baby farm animals. The weekends are filled with face painting and pony rides for the kids and free musical performances for the parents. While you are there, don’t forget to pick the best pumpkin to carve, get spooked in their Haunted House and lose yourself in the Apple Maze. If that isn’t enough to cram into one day, I don’t know what is!

Cost: No admission cost, and if you go midweek, you will get $2.00 off your bag of apples! 

How to get there: Take the New Jersey Transit’s #196 or #197 bus from Port Authority to Willowbrook Station in Warwick. The orchard is 1/2 mile down the road, which you can either stroll or take a taxi.

Harvest Moon Farm & Orchard

Located in North Salem, NY, Harvest Moon Farm & Orchard offers so much more than apples. During weekends in October, you can enjoy their fall festivals, which include pony rides, face painting, bouncy houses, pumpkin picking, and cider drinking.

Note: You will need to make a reservation, and each reservation only allows one car! There is a 2 hr time slot for each reservation. 

How to get there: Take Metro-North to the Croton Falls station, and then a taxi ride.

If you’d rather head to New Jersey to pick some juices, we recommend checking out Alstede Farms in Chester, NJ. A bonus with this spot? You can take a free shuttle from the station to the farm! Along with apple picking, the extras here include pony rides, corn mazes, hayrides, and a bouncy house.

Cost: Varies based on day and time you go, a breakdown of fees can be found here. Credit cards are accepted.

How to get there: Take New Jersey Transit to the Gladstone station and then a taxi or FREE courtesy shuttle to the farm.

This year, while all are clearly welcome, a special invitation has been extended to lovers who’s relationship bridge boundaries. Wedding attire is always encouraged, too!

We finally have gotten colder weather and snow in the Northeast! If you live in NYC and are looking for somewhere relatively close by to ski for Presidents’ Day weekend- check out Vermont! There are a ton of different ski resorts and mountains ranging from roughly a 3.5 to 6.5 hour drive from Manhattan. We have compiled a list of some great ski areas that definitely worth checking out this winter season. Whether you are a Glenwood resident looking to escape the city for a ski day trip or a weekend of fun, keep reading to find out where we suggest you go!

Stratton

Stratton is a little over 4 hours from NYC making it one of the closer Vermont mountain towns to ski! Stratton not only has great skiing, but has a bustling town! With great restaurants, shops, ice skating, and much more you will find a ton to do even if you are not an avid skier! There is even the Stratton Fitness center with an indoor pool, tennis, and cycling classes! Stowe

Named one of the “Top 10 Ski Towns in America” by Forbes, Stowe is somewhere that anyone who loves a quaint town will enjoy! Yes- it has great skiing, but it also has a great town filled with 50 boutiques and many spots to dine! If you want to shop, snow bike, dog sled, snow mobile, sled ride, winter zip line, or spa you are in for a treat! Stowe really is the winter ski town that has it all! For Glenwood residents, it is a 6.5 hr drive from NYC-but it is also filled with so many events and activities, which would make for a great long weekend getaway!

Sugarbush

Sugarbush is composed of two mountains-Lincoln Peak and Mt. Ellen- with over 100 different ski trails for all levels of skiers. Sugarbush is said to have a bit of that “western” ski town feel too. This is a great family spot! If you wake up early enough you can even ride one of the Snowcats that grooms the mountains during sunrise. Each room is themed slightly differently with an authentic cabin feel, and if you are a fan of farm to table dining- this is the place for you!  The drive to Sugarbush for Glenwood residents is roughly 5.5 hrs from NYC.

If you are looking for a beautiful and expansive tree farm, we have you covered! Visit Elwood’s 20+ acres in Long Island, NY. You will be met with both the jolly views of all the Douglas Fir trees and the incredible scents that only real trees give off! If you need assistance- Elwood Tree Farm employees are more than friendly and ready to help you get your tree tied to your car. Note that the sawing down of your own tree only takes place on the weekends. (They also have precut trees if you would rather pick one up that has already been prepared.) The address is: 1500 E Jericho Turnpike, Huntington, NY 11743. It is about 1 hour from NYC.

Wilkens Fruit & Fir Farm

Both Douglas and Fraiser Firs await you at Wilken Fruit & Fir Farm! They not only have great trees- but also a Christmas village for you to browse! Plus- they will give all those who purchase a tree a free hot apple cider. A great experience for all! The Fir Farm is located in Westchester County at 1335 White Hill Rd, Yorktown Heights, NY. It is about 55 minutes from NYC.

Averill Farm

If you are looking for a bit of a holiday full day trip- check out Averill Farm located in Washington Depot, CT. While this is 2 hours from NYC- there is a lot of holiday cheer around this part of CT. You can pop into all the towns charming holiday stores and you are close to what is one of the best egg nogs out there, Arethusa Farms! This is a must stop for freshly made egg nog, pies and ice cream! So, if you are looking to fill a day up with an adventure that ends with bringing home a perfect tree- visit Averill Farm. 250 Calhoun Street, Washington Depot CT. There is also an incredibly beautiful hotel in town called the Mayflower Inn and Spa if you want to escape the city for a night. Highly recommend this Inn for a luxurious stay out of the city.

For The Kids Who Love Art Projects: The Craft Studio

If your child is a budding Picasso (or just enjoys the ritual of gluing glitter to everything!), The Craft Studio on the Upper East Side is a fantastic option for some back to school activities. They offer classes in painting, sculpting, design and other crafting skills.
