Hanukkah begins sundown on Wednesday, December 25th! One of the best parts of these 8 special nights is sitting with your friends or family and sharing quality time over potato latkes. These recipes are easy to whip up in your Glenwood apartment, and fun for the entire family to participate in. Keep reading to find out more.

Classic Potato Latka Recipe

This recipe comes from the NYT and is as simple as it is delicious!

Ingredients:

  • 2 large Russet potatoes, scrubbed and cut lengthwise into quarters
  • 1 large onion, peeled and cut into quarters
  • 2 large eggs
  • 1/2 cup all purpose flour
  • 2 teaspoons coarse kosher salt, plus more for sprinkling
  • 1 teaspoon baking powder
  • 1/2 teaspoon freshly ground black pepper
  • safflower or other oil, for frying

Direction:

  1. Using a food processor with a coarse grating disc, grate the potatoes and onion. Transfer the mixture to a clean dishtowel and squeeze and wring out as much of the liquid as possible.
  2. Working quickly, transfer the mixture to a large bowl. Add the eggs, flour, salt, baking powder and pepper, and mix until the flour is absorbed.
  3. In a medium heavy-bottomed pan over medium-high heat, pour in about 1/4 inch of the oil. Once the oil is hot (a drop of batter placed in the pan should sizzle), use a heaping tablespoon to drop the batter into the hot pan, cooking in batches. Use a spatula to flatten and shape the drops into discs. When the edges of the latkes are brown and crispy, about 5 minutes, flip. Cook until the second side is deeply browned, about another 5 minutes. Transfer the latkes to a paper towel-lined plate to drain and sprinkle with salt while still warm. Repeat with the remaining batter.

After you have made the best, crispy latka, you know that what you dip it into is just as important! Here are some suggestions of our favorite sides:

If you want to make the potato latkes a little more complex, try a dollop of creme fresh on top and then a small piece of smoked salmon! Or, if you are an apple lover, top your latka with apple butter and a slice of a red, sweet apple!

Summer in NYC is full of so many great events! This July and August make sure you catch Broadway performances in Byrant Park! The show start at 12:30pm on Thursdays, what a great way to spend your lunch break if you live or work nearby! About The Show

The performances take place on Thursdays from July 11ththrough August 15th. Grab a blanket and find a spot on the lawn of Bryant Park. You can start reserving your spot on the grass at 11am. The show is sponsored by 106.7 Lite fm, which means it is free! Glenwood residents who work around Byrant park should definitely check this out!
